Každopádně jsem to udělal takto:

COPY scripts/init_docker_postgres.sh /docker-entrypoint-initdb.d/
db/structure.sql
je sql výpis, užitečný pro inicializaci prvního tabulkového prostoru.
Poté init_docker_postgres.sh
